RECIPES FROM THE CHALET We have been asked on numerous occassions by guests to post our recipes on the websites. Our menu is based on things we have eaten at restaurants and loved and many recipes are from our good friend Anna Pearce who has inspired us to try different things and given us the ability to steer away from normal “chalet food”. In her words LIVE, LOVE , LAUGH and EAT… Bon Appetite!   CARROT AND CREAM CHEESE CUPCAKES  ( MAKES 12 )  6oz sugar 8oz  SR Flour 2tsp mixed spice Zest 1 orange 2 eggs 8oz carrots grated 150ml sunflower oil Walnuts to decorate FOR THE ICING 4 oz Butter 10oz softcream cheese 4oz icing sugar sifted. Heat the oven to 180 degrees, and line muffin tin with cases Mix sugar, flour, mixed spice ad orange zest in a bowl. Whisk together eggs and oil. Grate carrots. Add ingredients together and mix well. Add to muffin cases and bake for around 20mins or until a knife comes out clean when inserted. Cool and pull off muffin cases gently. Mix icing ingredients , then top each carrot cake with a thick layer and top with a walnut.     TARTIFLETTE – SKIVILLAROGER STYLE ! Peel and slice evenly the potatoes. Part Boil until al dente. Fry off lardons or chopped bacon Slice 2 onions into rings and add to lardons  with 2 cloves of galic. When soft add a large glug of white wine and reduce until its fully absorbed by the mixture. Add potatoes to casserole dish and pour on the onion, garlic and lardons. Season well and mix gently with the potatoes. Top with a layer of cream fresh. Top with sliced Reblochon Cheese. Cook  in oven for 45 mins at 180 degrees. Serve with  a dressed green salad , sliced fresh tomatoes with sea salt and basil and Charcuterie.     Patsy’s Lamb Shanks 4 Lamb shanks 1 large jar of passata 2 large tbsp of redcurant jelly 2 large tbsp of mint sauce 1.5 beef stock cubes 1/2 bottle of good red wine salt and pepper Add all ingredients to oven proof dish and stir. Cover tightly with foil and cook at 160 degrees for around 3 hours or until sauce has thickened. Serve on a bed of warm celeriac mash with a handful of rocket on the side.   Sunblush Tomatoes ( great as an apero or with a salad) Cut up normal fresh tomatoes into quarters. Season with Rock Salt and sprinkle on some Oregano. Drizzle with Olive oil. Put in oven at 180 degrees for 5 mins then turn off the oven and leave inside  for 12 hours. Lift the tomatoes out, squeeze  some fresh lemon juice into the oil and season to taste for the perfect salad dressing.   CHOCOLATE COURGETTE CAKE  350g self-raising flour 50g cocoa powder 1 tsp mixed spice 175ml extra-virgin olive oil 375g golden caster sugar 3 eggs 2 tsp vanilla extract 500ml grated courgettes (measure by volume in a measuring jug, but it’s about 2 medium courgettes; if using 1 overgrown one, peel first and take out seeds) 140g toasted hazelnuts, roughly chopped For the icing 200g dark chocolate, chopped 100ml double cream Put all the dry ingredients into a bowl and mix. Mix together all the wet ingredients and combine with the dry. Put in a cake Tin and cook at 180 degrees for around 40-50 mins or until a knife comes out clean. To make the icincheat the cream to nearly boiling the n pour over the broken up chocolate. Stir until melted and leave to cool before spreading on the cooled cake. BON APPETITE !

Away from the hustle and bustle of commercialised resorts you will sample typical French Alpine lifestyle with all the home comforts. Winter is fully catered.            During the winter some of the worlds best skiing is only minutes away from our door, the nearest being a four minute drive to Paradiski comprising of Les Arcs and La Plagne. This is one of the largest ski areas in the world, which we enter via the chairlift at Villaroger. Although there is endless skiing in Paradiski (over 425km of pistes and 143 lifts), our neighbouring resorts of Val D’Isere, Tignes, La Rosiere and Sainte Foy are only a 15-20 minute drive away. This enables you to ski up to 7 different resorts , visiting a different place every day, if you wanted to. For those people that normally only pick ski in ski out chalets, please come and stay as many of our guests now wouldn’t choose to stay and ski in just one Resort. They love our concept of skiing different areas and having choice and variation. Some may also think twice about having a four minute drive to the lift instead of being situated ski in – ski out which means within walking distance of a lift or piste. We say, which would you prefer, a short four min drive to a free carpark with a lift pass office next to the skilift with no queues, in the beautiful unspoilt village of Villaroger or a long walk in clumpy skiboots , carrying heavy skis , dragging the kids to a  lift that you then have to queue to get up the mountain? Give us a try, you will not be disappointed!                            We are totally flexible on bookings, come for a long weekend skiing, a short break skiing ,  the usual week, or even  2 week stay and  make use of the cheaper flights. During the Summer we offer the Summer Chalet on a Self Catering basis, although catering can be arranged by request.   In our Les Arcs Catered Chalet the food is just as important as the skiing and our food has aften been described as restaurant standard. Everything is freshly prepared by ourselves, and our varied menu includes flavours from other countries as well as delicious English and French dishes.  You will start the day with a hearty breakfast , scrumptious homemade cakes will await your return from the slopes for you to enjoy , and before dinner you can  treat yourself to a dip in the out-door hottub. Pre – dinner drinks and nibbles are taken around a roaring fire, before a beautiful 4 course evening meal accompanied by good BOTTLED wine is served, and the tales of the day are relived.    Summer is stunningly beautiful and you are surrounded by breathtaking scenery. The lifts are open in July and August for mountain bikers and walkers if you prefer to have the uplift without the effort. For road cyclists the Famous Cols featured on the Tour de France are on our doorstep. For families there are endless activities to do, such has high rope adventure, rafting, cycle rides, parapenting, glacial skiing and outdoor swimming pools and lakes.     Our Les Arcs Chalet, built over 200 years ago has been lovingly restored from its original use as a barn by ourselves, Jonny and Kumari. Making use of the old beams and large glass windows we have created the perfect place to spend your Les Arcs ski  holiday or your Summer Chalet Holiday  whether you are a couple, family or group of friends.  The chalet has good sized rooms, furnished to create a warm, relaxed and friendly atmosphere. We are always on hand and are fully involved in every aspect of your holiday from the initial booking down to waving you off at the end of your stay.This enables us to provide a high standard throughout your holiday.       Bookings are taken by the room, ie you don’t need to book the whole chalet !  The Accommodation Comprises of: Ground Floor (with underfloor heating)Bedroom 1: Twin beds with ensuite bathroom with walk in shower and W/C. Bedroom 2: Double bed with ensuite bathroom with walk in shower and W/C. Bedroom 3: Twin beds with ensuite bathroom with bath/shower and W/C 1st FloorLarge open plan kitchen/dining room and living area with log burning stove, which we do light every day, wood floors and comfy chairs. There is a CD player and DVD player for your enjoyment. The patio doors lead onto a paved terrace with decking and Outdoor Hot Tub. 2nd FloorBedroom 4: 3 single beds with extensive views over the Beaufort mountains and the villages below.Ensuite bathroom with walk in shower and W/C. Bedroom 5: Twin beds and bunk beds(sleeps 4).Ensuite bathroom with walk in shower and W/C. All our bedrooms are spacious and there is room for a “put me up” bed if the need arises. Towels  and hairdryers are provided. Free wi-fi access so bring your laptop.
